8 easy tips to make perfect jowar roti | Food-wine News
We are always looking for ways to perfect our skills like baking and cooking. While hits and trials can help us learn along the way, the best way is to follow each and every instruction to the T and stick to the measurements. So, to help you out this time to make perfect jowar rotis is food enthusiast Kanak Gurnani who shared eight easy steps to ace it.
Millets have been a significant part of our lives for many years, but they are experiencing a revival, feels chef Ajay Chopra. “Around 60-70 years ago, people incorporated grains like bajra, jowar, finger millet, and foxtail millet into their meals. However, over time, wheat gradually took over as the primary grain of choice. Now, people are rediscovering the numerous health benefits of millets, and in 2023, which is recognised as the International Year of Millet, it’s a fantastic initiative to make and showcase millet-based dishes,” said Chopra.
How is jowar or sorghum beneficial for you?
Ayurvedic practitioner Dr Dixa Bhavsar Savaliya said that jowar is gluten-free, rich in fibre, controls blood sugar levels, high in protein, good for bones as it is packed with vitamins, minerals, and micronutrients (iron, magnesium, copper, calcium, zinc, vitamin B3), among other benefits. “It improves metabolism and relieves constipation, improves heart health- LDL, HDL, and maintains energy levels throughout the day,” Dr Bhavsar said.

Preparation Time – 30 mins
Cooking Time – 20 mins
Serves – 6 Thin Rotis
Ingredients
1 cup + 2tbsp – Jowar flour
1/2 cup – Hot water
1/4tsp – Salt
Ghee – as required
Steps
*Take a mixing bowl. Add jowar flour, salt, and hot water. Mix it with a spoon then cover and let it rest for 30 mins.
*After 30 minutes, knead the dough. If the dough is too sticky, add some jowar flour or if it feels too dry, use wet hands to knead the dough.
*Transfer the dough on to a flat surface. Use some dry flour to stretch and fold it. This process will make the dough smooth. Don’t skip this step.
*Divide the dough into six equal dough balls. Take one and keep the rest dough balls covered.
*Before rolling the jowar roti, stretch and fold the dough ball for 30-40 seconds and then roll it very gently using lots of dry flour. Do not skip this step as this helps in getting smooth sides and perfect roti, shared Kanak.
*Gently transfer the roti on tawa. Cook one side for 40 seconds or until you see small bubbles on roti.

*Flip the roti and cook the other side on medium flame, apply light pressure and you will see the roti puff up.
*Cook both sides for a few more seconds until you see brown spots.
How to serve?
Apply ghee and serve immediately. You can store the rotis in a casserole for a few hours.
Millet rotis turn dry and hard once they cool down so it’s always better to make fresh and consume immediately, Kanak shared.
